This salad dressing is hugely popular at the piano camp where I have been the Chef for the last two summer seasons. It looks like your typical creamy, dairy-laden dressing but it’s vegan. This is probably the EASIEST recipe I have for dressing.
I use good quality FROZEN orange juice concentrate (straight up oranges, nothing more – no sweetener, NOTHING) to make this because I like it to have a strong orange flavor and tweeking the flavor is easy to do with the concentrate. You can try it with regular orange juice OR a whole seeded orange (or 2) and will likely be pleased with the results. This recipe came about in the winter months in Louisiana when satsumas and pecans are plentiful. Use what YOU have locally if you are lucky enough to be where these ingredients are in season.
