I’d be embarrassed to tell you how long it took me to finally find the time to make pesto with the five very overgrown plants I had in my yard. I coerced my neighbor to come and help me pick the leaves with the promise of dinner. There was a LOT to pick and he was justly rewarded.
I love pine nuts but I REFUSE to pay $20 or more for a pound for them. Plus, because I eat a fair share of tree nuts I’m trying to find ways to integrate more seeds into my world. AND… because I used raw nuts, it makes this more nutrient dense. Win, win, win…all around.
