Strawberry Cheesecake Pudding…or cream. This dish is super flexible and you can ultimately call it whatever you’d like.
If it’s thicker I call it pudding.
If it’s thinner I call it a cream.
Cashews are super flexible. They can be used as a sweet dish or a savory one. This salad dressing recipe I have for lemon garlic cashew dressing is my most popular recipe ever. It draws a ton of traffic to my website. A ton.
Make cashews your friend. Especially if you are trying to get away from dairy.
Here’s what I do know about this recipe and you need to know it before you start to blend. . You can ALWAYS add more water to any dish but you can’t always take it out. Be careful not to over add when blending. A little bit of water has a greater effect on the consistency of this dish than you might think.
Also, the combo of lemon and vanilla is what makes “cheesecake” flavor. Don’t like cheesecake? Leave the lemon out.
For the pudding:
1 ½ Cups of raw cashew pieces soaked overnight
2 Tbsp. fresh squeezed lemon juice
¼ vanilla bean – seeds scraped out and added (1.5 tsp. of liquid vanilla)
6 large ripe strawberries (more if desired)
¼ cup, plus 2 Tbsp water (if you add more fruit, cut back on water)
2 Tbsp raw local honey
Zest of lemon – (organic only and only a about three quick scrapes off the fruit)
Add all the ingredients except 2 Tablesppoons of water into a high speed blender and blend the crap out of it at high speed until smooth. You really need to have a good quality blender to make this smooth.

For the crumble:
In a smaller food processor fitted with an “s” blade combine:
1 cup of raw pecan pieces
1 TBSP cacao nibs
2 TBSP cacao powder
3 medjool dates – pits removed
Pinch of sea salt
Pulse all ingredients until evenly sized. At the very end drizzle in 1 TBSP. raw local honey while the machine is spinning. This will pull it together a bit and make it sticky.
Serve in a small dish and top with the crumble OR pile it up parfait style with some sliced strawberries. Either way it will knock your socks off.
Makes 4 , small servings as pudding, more if you prepare as parfait.
TIP – Take remaining crumble and roll it up into bite sized balls. Freeze and enjoy as a snack.
TIP – The pudding can be used as a fruit crudite’ dip and can be flavored with any fruit you choose.
