Strawberry Spinach Salad
You know I love simplicity. Love it.
Local strawberries started appearing again a few weeks ago and they are DEE-lish. Lazy and not feeling like chopping much I tossed this salad together and it was a WINNER!
3 cups fresh spinach leaves
1 cup strawberries, washed and sliced to your desired bite size.
1 ripe avocado
2 Tbsp. 10 year (or older) Balsamic Vinegar
2 Tbsp. Extra virgin olive oil
Sea salt and black pepper to taste
Add all contents to a large bowl. Toss and squish a little bit to soften and blend the avocado to a creamy consistency.
If you have basil, add it. You won’t be disappointed.
